Poached Egg with Swiss Chard

  • 1 ½ tbsp white wine vinegar 
  • 4 large eggs
  • 200 g / 7 oz / 4 cups chard, washed

Method

  1. Bring a large saucepan of water to a slimmer, then stir in the white vinegar
  2. Crack the eggs in to a small bowl and slide them into the simmering water. Poach the eggs for 3-4 minutes , until just set.
  3. Put the Swiss chard in a pan with just the water left on the leaves, cover and cook until witted, Drain well on kitchen paper.
  4. Toast the bread and spread with the margarine. Place on serving plates and top with the Swiss chard and eggs. Season to taste with salt and pepper

  • 150 g / 5 oz / 1 cup unbleached plain ( all- purpose ) flour
  • 1 ½ tbsp baking powder
  • A pinch of salt
  • ½ tbsp ground cinnamon
  • 250 ml / 9 fl. oz / 1 cup unsweetened soy milk
  • 2 tbsp flaxseed oil
  • 255 g / 8 oz / 1 ½ cups blueberries 
  • 240 g / 8 oz / 1 cup vanilla Soy yogurt 

Method

  1. Combine the flour, baking powder, and salt in a large mixing bowl. Whisk in the agave nectar, soy milk and 1 tbsp of flaxseed  oil you have a smooth batter. 
  2. Heat a non-stick frying pan over a medium heat until hot. Grease with a little of the remaining oil, then add a small ladle of the batter to the pan. Drop a few blueberries in to the butter as it cooks. 
  3. Once the pancakes are golden underneath,  flip and cook for a further minutes so. Slide out onto a plate and cover loosely with kitchen foil to keep warm.   
  4. Grease the pan with a little oil and repeat the process with the remaining butter, reserving a few blueberries for a garnish.  
  5. Save the cooked pancakes in tracks with soy yogurt, ground cinnamon and the reserved blueberries on top

Avocado, Banana and Chia Smoothies

  • 3 tbsp chia seeds
  • 750 ml / 1 ¼ pints / 3 cups unsweetened almond milk
  • 250 g / 10 oz / 2 cups blueberries 
  • 2 small bananas, chopped
  • ½ small Hass Avocado, pitted and diced
  • 1 tbsp agave nectar
  • 1 tsp vanilla extract
  • A pinch of cinnamon
  • 225 g / 8 oz / 1 cup crushed ice 

Method

  1.  Combine the chia seeds and almond milk in a blender, leave to stand for 10 minutes.
  2. Add the remaining ingredients except the crushed ice and blend for 2 minutes, scraping down the sides if needed.
  3. Add the crushed ice and blend for a further minute. Stir well.
  4. Pour into glasses and save with straws.

Fore the Muesli

  • 180 g / 6 oz / 2 cups rolled oats
  • 550 ml / 19 fl. oz / 2 ½ cups unsweetened almond milk
  • 2 tbsp chia seed
  • 2 tbsp maple syrup or kithul Syrup
  • A pinch of ground cinnamon

For the strawberry puree

  • 300 g / 11 oz / 2 cups strawberries, hulled and chopped
  • 1 tbsp lemon juice
  • 1 tbsp agave nectar

  1.  For the muesli: Combine the oats, almond milk, chia seeds, maple syrup and ground cinnamon in a large mixing bowl. Stir well, cover and chill overnight.
  2. For the puree: Combine the strawberries, lemon juice,  and agave nectar in a food processor or blender. Blend on high for 1 minute until smooth, scraping down the sides if needed. 
  3. Pass the puree through a sieve into a small jug.
  4. Spoon the oats into pots and top with the strawberry puree before serving.
