Herby Bacon Omelette

Ingredients

  • 1 rasher unsmoked bacon , chopped
  • 2 large eggs
  • 2 tbsp flat leaf parsley, chopped

Method

  1. Fry the bacon in a dry frying pan for 2 minutes to release some of the fat, then remove it from the pan with a slotted spoon and reserve.
  2. Lightly beat the egg with the parsley and a pinch of salt and pepper.
  3. Pour the mixture in to the frying pan and cook over a medium heat until it start to set around the outside.
  4. Use a spatula to draw the sides of omelette in to the centre the tilt the pan to fill the gaps with more liquid eggs.
  5. Repeat the process until the top of the omelette is almost set the sprinkle over the bacon pieces.
  6. Fold the omelette in half and serve immediately.

Top Tips

For a vegetarian alternative with the same calories, replace the bacon with 30g of feta cheese

Coddled Eggs

  • 4 sprays of 1- cal sunflower oil spray
  • 2 large eggs

Method

  1. Spray a ramekin dish with oil, and then break in the eggs.
  2. Place the dish in a sauce pan and pour enough boiling water around the outside of the dish to come halfway up the sides.
  3. Put a lid on the pan and simmer gently for 6-8 minutes or until the egg white has set, but the yolks are still runny.
  4. Carefully remove the eggs from the ramekin and sprinkle with chives before serving.

Scrambled Egg On Toast
